Castagnole

Buona giornata!

Put in a bowl the flour, eggs, sugar, butter, vanilla, salt, grated lemon rind, liqueur and yeast; work the ingredients until blended, then transfer the dough on a pastry board lightly floured surface and knead until a soft dough is smooth and compact. Formed with the palms of the hands of the balls (if you want to cut into the surface with a screwdriver), and fry a bit 'at a time in hot oil and low heat, turning them into the pan until it is well puffed and golden and begin to float. Once ready, take your asiugare crackers on a paper towel, sprinkle with icing sugar or granulated.
